Ingredients:
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 1 head cauliflower, cut into florets
- 2 tablespoons ghee or coconut oil
- 1/4 cup coconut milk
- Salt and pepper to taste
- 4 cups mixed greens spinach, kale, collard greens, etc
- 2 cloves garlic, minced
- 1 lemon, juiced
- 2 tablespoons olive oil
- Chopped fresh parsley for garnish
Instructions:
Toss the shrimp in Cajun seasoning, ensuring they are well coated, and set aside
Steam or boil the cauliflower florets until they are tender, about 10-15 minutes
Drain the cauliflower and transfer it to a food processor
Add ghee or coconut oil and coconut milk
Blend until smooth and creamy
Season with salt and pepper to taste
Keep warm
In a large skillet, heat olive oil over medium heat
Add minced garlic and saut for about 1 minute until fragrant
Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side or until they turn pink and opaque
While the shrimp are cooking, in a separate pan, wilt the mixed greens with a squeeze of lemon juice
Cook for 2-3 minutes until they are tender but still vibrant
To serve, spoon the cauliflower grits onto plates, top with sauted greens, and Cajun shrimp
Garnish with chopped fresh parsley and an extra squeeze of lemon juice
